Consider that many of them will run reliably for many, many miles and put out decent HP. And they are less expensive to build, are often cheaper and easier to fix, and many of the V8s are very tunable. I think of the basic 5 litre Ford V8, which has about 225 HP in stock trim and bolt-ons will get it well over 300.
Sometimes "old" technology works just fine!
