You can get mechanical or electronc boost controllers which have two stages of boost, controlled by a switch. You could rig up a switch at the gear shift to pick up first gear.
The ECU that you have invested a substantial sum into, will map to much higher pressures. So for a minor amount more you could get higher pressures and a sane first gear. For substantially higher boost, if you run into injector capacity problems, then you will have to deal with that with any approach you take. This way, you could dial in whatever boost you want in 1st gear, and be able to determine your max boost too!
As for torque and boost shaping, by your own objectives, I think that you are needing as agressive a torque build up as you can get. Nothing else is going to get you going faster. It is nothing that you will not like, you will just develop different throttling techiques for when you are not driving aggressively.
I hate to see you abandoning your investment in the Abbott ECU.
