not following you on the retaining wire; someone else chime in here?
the torx screw that holds the rotor on is #40; don't know the length or thread count. try hitting up your local indy for one or, if you live near a screw supply store like i do, bring it to them for an equivalent. junk yard or, last resort, dealer ($$). don't be too agressive with tightening up the new one; 30 lb/ft is what you need (get a torque wrench if you don't have one already - some are expensive; others reasonable. i got a low-cost one @ sears). i seem to recall others posting about stripping this; maybe use a little anti-seize on the threads here.
you should adjust the caliper so there is no rubbing.
not sure i understand what you're saying about the 'v' vs 'u' profile. my sense is that if the rotor surface is in good shape, don't worry about the edge.
i'm thinking those two screws you found came from the backing plate. Again, I'm not familiar with the earlier brakes, but that's my guess. i know for a fact that my '89 has a couple in the rear, so it stands to reason that there are some on the fronts as well.
