There is no way that any human with only a single input/output can come close to equalling the abilities of a dedicated, microprocessor-driven, multi-channel (for individual wheel proportioning and load balancing) ABS system on a surface that is free of particulate but has a near zero coefficient of friction. No way.
The human brain can process things extremely quickly, but the total reaction time between the foot and the pedal would be literally 100's (likely 1000's) of times slower at sensing and providing adjusted feedback to the single brake pedal input/output, even in the very best cases. A human just can't mechanically move as fast as an ABS controller. And on top of that there's no provision for individually biasing the amount of braking force to the individual wheels with only a single input.
Race cars don't use ABS because it's against the rules, like in F1 since around 1995(96?)--because it makes it too easy for the drivers and increases the overall speed. Just like launch control is no longer allowed (this year), and ground effects are limited. The computers and designs are just to darn good. You are right about off raod racing though.
