Besides the improvements in speed & ease of assembly, it makes sense to stick with the same style & size of fasteners for as much of the assembly process as possible. If you *need* Torx in some areas, you may *want* Torx in other areas for time & cost concerns.
In many cases, as long as the bolt can achieve & maintain the proper torque, it won't matter what the drive & head configuration is. (Although sometimes, dispersion of load under the head may be a concern. An appropriate washer may be needed when replacing a button- or pan-head with a socket-head cap, to prevent it from gouging the material.)
Outside of assembly & cost considerations, I think Torx really shines in small-screw applications, where hex sockets (& wrenches) of 2mm & smaller strip out far easier than the comparably sized Torx sockets.
