The difference is at 25-30 years in, they aren't new anymore. "Up to snuff" depends on one's impression of what that is. Replacing all the hoses etc is not too big of a deal, but in a northern salty climate for example, it is basically impossible to go back to when the car was new as there will be corrosion that is impossible to get perfect and eventually this stuff snowballs. Even aside from that, mileage does equal wear, even in a well maintained car (tranny, motor). Making everything perfect is expensive, and unrealistic for anything other than a show car.
Getting the car in good working order and updating systems on a schedule can however keep it very reliable, but there will be issues from time to time. If that happens on a longer trip away from your resources, it can be hard to get things fixed properly unless you are highly capable yourself and have access to parts. A new car (especially from a major supplier) is generally better in that regard because the dealer network has a more immediately available parts network.
So I kind of partly agree with your sentiment, but at the same time I think one has to be fairly committed to drive a c900 these days, and tbh, that is a good thing as there are not really that many of them left, and they deserved to be treated well, as is likely the case from someone with the commitment to own and maintain one.
