On the engine rev at cold startup, does it rev up to 2500 just once and that's it? If it was more than once, I might suggest the AMM, or AIC, but just once seems very odd. I had a cold revving problem (though don't think mine ever got past 2k), but it would do this several times before the car warmed up. Though it was my cheapo remanufactured AMM, but ever since I cleand the AMM, Throttle Body, AIC, and fixed all vacuum leaks, the problem has completely disappeared!
As to the tapping, don't think there is much you can do if you are already using synthetic. My car does it using dino oil, always has, though it's not nearly so cold here if I recall. I guess you could park the car upside-down, and then turn it over a short time before you start it. :)
Seriously though, would an engine block heater help here? I'm not sure, what it sounds like you really need is a pre-pump of some sort to pump the oil up from the sump and get it around the engine before you start it..
I know it sounds bad, but my car has done this as long as I've had it (for nearly 100k miles) and it's still running srong with almost a quarter of a million miles. :)
