Nice road! Wouuld love to drive that one! Those look like 100 mph+ straights and 25 mph corners! (as long as no one's around!)
As you note, the idea is to be in the correct gear when entering the turn. If someone has to shift down or up while actually in a turn they have made a mistake. For example, when doing a turn in 2nd gear there should be enough revs left to exit the turn before shifting up to 3rd. If not, the turn should be entered in 3rd, instead of upshifting in the middle of the turn.
With an automatic, put it in sport mode so it does the shifting and drive a road the same way (speed) as if you were paddle shifting. The trans will probably not shift in mid turn unless the driver isn't consistent on the gas or is not really driving it very hard. Use the rev range of the engine to get the most out of the car.
Considering that 2nd gear in a Saab is good for about 60 mph or so (depending on the car) and 3rd is good for 90+ there is a lot of latitude in each gear so shifting up or down in a turn should never be necessary.
