Carbon deposits exist in every single used car engine. They are normal combustion byproducts. Engine oil get most of it out to the oil filter, but some deposits being left behind is inevitable at locations where oil flow speed is low during normal engine operation; it's just like alluvial plains created by river flows carrying silt and mud. Getting all carbon deposits out may not be a good idea for a high mileage engine; in some parts of the engine, the "gunk" may be what's preventing the engine from leaking like a sieve.
The type of "gunk"/location that you do want to remove are the type that restricts oil flow and leading to oil starvation for parts of the engine. In the B235 and B205 engines, there is one particular location that merits attention: the oil pickup screen near the bottom of the oil pan. The fine mesh screen designed to protect the low-friction oil pump can be plugged up over time just like kitchen sink screen and animal hearts by plaque formation. Loosening all the "gunk" throughout the engine without a way of removing the rain of debris from the oil pan would actually be highly dangerous: it would actually lead to a rapid increase of debris at the bottom of the oil pan to clog the pickup screen.
