Maybe something like X amount of refridgerant converted from liquid to gas "absorbs" Y amount of heat. Increse X (flow) and Y gets bigger.
The low side pressure is mearly an indication of the temperature that the refrigerant is at when it converts from liquid to gas.
The conversion from liquid to gas(boiling) (or solid to liquid ie melting) requires a lot more energy than mearly raising the temperature of an object. The amount given off in the gas to liquid (or liquid to solid ie freezing)conversion, is much more than the energy of lowering a temperature.
The temp bulb tries to flow the amount of refrigerant needed to maintain a certain temp at the output of the evaporator. Heat is removed from the air flowing across the evaporAtor by the liquid refridgerant "boiling".If all the refrigerant is not boiled off the superheat line senses the resulting increse in pressure and slows the flow to prevent liquid being returned to the compressor. If the temp at the outlet is high, the valve opens more to allow more refrigerant to flow and absorb more heat.
If thats not confusing enough, try the theory that there is no such thing as cold. There is only more or less heat, till you get to absolute zero, which is just the absence of any heat.
Course if I told my wife its not cold outside, its just not warm, being the good sothern belle she is, I'd get a frying pan alongside the head.
