I've been driving that 01 Quattro for 2 and a half years and 42,000 miles now and I know it very, very well.
But yes, you are correct--previous versions of Quattro (my Dad's '95 wagon as well) did have that switch to engage I think as you said the rear differential if you find yourself stuck in mud or snow...and an interesting detail was that deactivated itself once you got over 15mph.
Your friend's car is/was "relatively" slow--that was a previous generation of the 2.8 V6 that was updated to a 30valve around '98--his car's 2.8 V6 was only 12valve and had about 20-25 less hp and ft. lbs. of torque...and the automatic was only a 3-speed I think...so that combination was a little slow/boring given the fact that it was a relatively large/heavy car...A6 or 9-5 size...
