If a spring breaks, it is contained by the torsion shaft, so quite safe. There is a danger when you are winding or unwinding the spring. If it gets away it will throw the rods that you are using to do that. I have done such work a few times, even an old guy can do it. You should not be afraid of unwinding the spring, no danger if you approach the problem correctly. Get solid steel 1/2 steel rod from the hardware store, you will need to cut for two 18" lengths.
I would not want to break the spring as you suggest.

Ifyou get a new door that is a different weight, you will need to get springs that match that doors weight. As per the link, you can get the normal lower cost springs with limited life that will break in 15-20 years or you can get the job done with springs that will last a very long time.
You will need to unwind the spring, then remove the cables, the remove all of the shafts/pullies and center/end bearings. The bearings and cables are wear items, suggest that you get new ones. Good time to replace the rollers too. They can be noisy. The nylon ones run quieter.
When you order new springs, you will need the weight of the garage door, pulley diameter and its height [travel]. That is enough to determine spring solutions. Alternatively, you measure the old wire diameter, coil diameter and number of turns. You will need a caliper or micrometer to get the wire diameter. Garage door companies may be uncooperative. When I ordered springs and hardware I was very impressed with how fast things were delivered, and that was for custom wound springs.
