you'll find countless discussions comparing the 4 and 6 cyl engines in these boards...
it sounds like your priorities are a quiet and smooth engine that has a modest amount of passing power... It also sounds like you've made up your mind to stick to a 6 cyl..
Keep in mind that a turbo charged engine isn't exactly known for its smooth acceleration, though Saab seems to do it better than most.. The Linear and Arc use a modest amount of turbo boost, so you may not find it offensive at all.
As far as the noise at revs goes...Saab engines are excellent performers in the low/mid rev range ... so you rarely would ever move into the high rev range for the type of driving you seem to prefer...
I would definitely consider the Arc given your requirements. It has pretty much everything the Aero offers in terms of luxury options, etc.
