If I drove a lot of miles and wanted fuel economy I'd get a VW TDI. I used to sell them and I had customers who were getting 50 mpg plus. More importantly it was a great highway car. It was geared very high so it was just loping along at highway speeds, but it had so much torque it was very responsive to the throttle without having to downshift. You could cruise at 80 and still get good mileage. You could go something like 800 miles on a fillup. It was fun to drive, had good steering, handling and brakes. The seats were comfortable. It's technology that's been around for years with no surprises. And I've seen VW diesels with 300K on them that were still running.
