The machine shop I used completely strips the head, cleans and pressure tests it, checks the guides, and resurfaces the valves that they don't replace. In my case they also lightly planed the head just to clean it up the surface. When I went to drop my head off, I noticed that there were two Saab heads ready for pickup, so I felt comfortable having them do the work.
