The standard answer is: "Steer in the direction of the skid!"
But what does that really mean? If you heard that in Drivers Ed but never practiced it would you know what to do when it REALLY COUNTS?!
Thus, my advice always is... Practice, Practice, PRACTICE!! Find a big empty parking lot and do some emergency maneuvers... Find the limits of your tires and yourself!
You will find in certain situations, like when the ass end of the car is starting to come around, if you so much as TAP the brakes you're gonna "swap ends" quickly. And if you overcorrect you might get a violent "snap back" when the tail swings back the other way.
These things are very hard to get across in words... The key is to find out for yourself!
