I have one of those permanently installed on the SPG. :)
Now that everyone is tuning diesels, you can buy actual steel banjos with either Shraeder valves or NPT threads for an electric sender. The latter is on my '17 to do list. Like this:

With that you can use any electric fuel pressure gauge and watch pressure from the cabin.
As a troubleshooting step, you could consider hardwiring the pump, maybe to a switch. Then when the car stalls, if the pump is still running you know that's not it. And if it's not running you know it is.
If there is reliably time when it won't restart, wire a noid light into one of the injectors. When it stalls, see if the light still flashes. If it doesn'[, it's ignition related, or possibly the ECM.
