You've said the car had no major oil leaks, but what about oil consumption? Did it ever puff bluish-white smoke at startup or on deceleration, possibly caused by worn bearings/seals in the turbo or worn piston rings? Mine was puffing at startup almost daily and it didn't seem like much was being burned, but I checked my oil level 2 months after a change (I stick to 3mo/3000mi intervals) and it was over a quart low, with no warning lights. If it's been "months now" since your last oil change, burning a little oil here and there could easily add up to a lot.
As an aside, you say Jiffy Lube added 4 quarts, but have you looked at the dipstick yourself? The system can hold more than the amount specified in the manual, but it's not meant to be filled to the brim. I once made the mistake of going to a quick-lube place that overfilled my oil by dumping in 5 quarts, so I had to siphon some out to bring it DOWN to the max line on the dipstick. The fact that they were able to add 4 quarts doesn't necessarily mean your level was 4 quarts below spec, although it's still pretty drastic either way.
Regarding symptoms, when my oil level was about 1 quart low, what tipped me off to check it was that I noticed a tapping sound from the passenger's side at idle, but could only hear it from inside the cabin, which (according to this site) often happens when the valve lifters get dry. Once I topped-up the oil, this sound seemed to go away. Sounds a lot like the noise you described, so if it's been doing that for several months, that won't help your argument. Sorry...
By the way, speaking as an engineer, if parts are designed well and manufactured to close tolerances with good quality control, they should theoretically still be able to function normally with little or no lubrication...just not for anywhere near their intended design lifetime. Regular oil changes are meant to make the car last for many years, so it's not unthinkable that it could take several months of oil starvation before significant damage occurred.
